Raw vegetable soup
I made my first raw meal tonight, besides salad, for the Vegan Cook-a-long - a raw vegetable soup! Raw! Not cooked! It was really surprisingly tasty. Read more here!

i'm not surprised it was good. i love gazpacho, which is just raw vegetable soup. raw soup is like a vegetable smoothie. brilliant!

i love raw soups! this one looks very very good! and i agree with jen, this one resembles gazpacho! lately, i've been eating raw soup every day for dinner! usually a green (like spinach, broccoli), lemon juice, some soaked nuts for nut milk, spices, i'm forgetting the rest but aa knows!

yeah - I guess it is like a gazpacho, huh? The gazpachos I've always made used tomato juice, so somehow my mind went "Not gazpacho" :)
Michelle, adding soaked nuts sounds wonderful! I'd never made a real raw soup before and I really enjoyed it. The best part was that I could eat the entire thing and not feel as though I was eating too much.

ok, so since you're interested (!): first, aaron will make a nut milk (it's often almonds), by soaking the almonds for a while and then processing. he'll put that into a bowl, and then process things one or two at a time. squeeze the citrus and add the spices last. pour out the servings, add salt and oil to his! when i'm at home, i'll write you to share some of the favorite combinations we were smart enough to commit to paper!
